Apologies for what maybe a dumb ass question..

In order for me to connect the Sky+ hard drive to my desktop PC, I will need a USB caddy. What size will I need please? Will it be the 2.5" or 3.5"?

In the UK all Sky+ boxes use 3.5" desktop drives. PATA (IDE) drives for standard Sky+ and SATA for new HD boxes.
Please note that Copy+is no longer of any use for HD boxes since the deployment of the Darwin EPG. Try ExPVR instead.

What type of box are you going from and to please?
You are aware that it is no longer possible to transfer fro SD to HD?
If copying from SD to SD please continue to use Copy+. If copying HD to HD please Google for and use ExPVR.
Unfortunately there is no longer any upgrade path possible from SD to HD - Sorry.

My software (ExPVR) does support copying from legacy devices (SD boxes and the Thompson) to the newer HD boxes in the more recent versions. The planner is converted as part of the copy.
